Brendan McGill Pop-Up Dinner at The Wandering Goose

The Wandering Goose is launching a guest chef pop-up dinner series in 2026, and our first dinner features Brendan McGill, the chef, farmer, and founder of Bainbridge Island's Hitchcock Restaurant Group.
McGill grew up in Fairbanks, Alaska and spent his career building one of the Pacific Northwest's most respected culinary operations; restaurants, an organic farm, and a fermentation program rooted in the region's fields, forests, and waters. A James Beard Semifinalist and Food & Wine People's Best New Chef, he has spent years going deeper into sourcing and craft. Seafood is at the heart of that work, and he'll bring it to Tokeland in April.
For this special evening, McGill will present a multi-course menu inspired by spring on the coast—highlighting regional seafood, local farms, and the wild ingredients of the Pacific Northwest.
Guests have the option to include wine pairings with their dinner. Beverages will be served a la carte all evening.
